Chicken or Pork Satay

Ingredients

  • 2 lbs. boneless pork or chicken, cubed
  • 3 Tbsp. peanut butter
  • juice of 1 1/2 lemons
  • 1 clove garlic, crushed
  • 1 Tbsp. ground coriander
  • 1/2 cup soy sauce
  • 1/4 cup dark sesame oil
  • 1/4 cup dark brown sugar
  • fresh ground pepper to taste

Preparation

Step 1

Whisk together peanut butter, lemon juice, garlic and coriander until smooth.

Slowly add soy sauce.

Gradually beat in sesame oil, brown sugar, and pepper.

Add the meat to the marinade. The longer it marinates the better it tastes.

Put on skewers and broil, preferably on the grill.
