Tex-Mex Corn Chip Chili

Ingredients

  • 2 TBL olive oil
  • 1 LB lean grd beef
  • 1/2 sweet onion, finely chopped (abt 1C)
  • 1 clove garlic, finely chopped
  • 1 TBL chili powder
  • 1 tsp grd cumin
  • 1 15-oz can black beans
  • 1 15-oz can pinto beans
  • 1 10-oz can tomatoes w/ green chilies
  • S & P
  • 1/2 C chopped cilantro
  • 12 oz pepper jack cheese, shredded (abt 3 C)
  • 1 bag (abt 10oz) corn chips, such as fritos

Preparation

Step 1

in dutch oven, heat olive oil over med-high het
add beef & cook for 7 min
add onion, garlic, chili powder & cumin
cook over med-low heat for 5 min
add beans, w/ their liquid & the tomatoes
bring to simmer
cook, stirring occasionally until thick abt. 15 min.
season w/ S & P

stir in cilantro,
top w/ cheese
cover & let stand until cheese melts
5-10 min
place a handful of corn chips in each of 4 bowls
top w/ chili
serve
