Ingredients

  • 4 chicken breasts
  • 1 T green onion chopped
  • 1 T parsley
  • 1 clove garlic
  • 1/2 stick butter
  • 1 beaten egg
  • 1 T water
  • 1/4 c. flour
  • 1/4 c bread crumbs
  • 1 T butter
  • 1 T cooking oil

Preparation

Step 1

Pound chicken and season with salt & pepper, onion, parsley, and garlic.
Cut 1/2 stick butter into 4 pieces. Place stick in center of each piece of chicken.
Fold in sides & roll up jelly roll style pressing edges to seal.
Stir together egg & water. Coat rolls with flour, dip in egg mix and roll with bread crumbs.
Cover and chill all day.
In large skillet melt butter and oil, add chicken, cook over medium heat for 5 minutes. Transfer to baking dish.
Bake at 400 degrees for 15 - 18 minutes
