Pecan crusted chicken

Ingredients
- 4 boneless chicken breasts
- 1 cup pecans
- 2 T cornstarch
- 1 t. thyme
- 1 t. paprika
- 1.5 t salt
- cayenne peper
- 1 egg
- 2 T water
- 3 T cooking oil
- 1 c. mayo
- 1/2 t sugar
- 2 T parsley

Preparation
Step 1
In food processor pulse pecans with cornstarch, thyme, paprika, 1 1/4 t salt, and 1/8 t cayenne until nuts are chopped fine. Transfer mixture to medium bow.
Whisk together the egg and water in small bowl. Dip each chicken in egg mixture then in the nut mixture
In large frying pan, heat oil over medium heat. Add chicken and cook for 5 minutes. Turn and cook until chicken is golden brown for 5 -6 more minutes.
Meanwhile in small bowl make dipping sauce:combine the mayo, vinegar, sugar, parsley, caynenne and 1/4 t salt.
