Spicy Shrimp and Rice

Ingredients

  • 1 C long-grain white rice
  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 6 garlic cloves, chopped
  • 1-1/2 C strained tomatoes (or if you can't find that, use regular canned tomato puree -- that's what I've been using)
  • 1 tsp Cajun seasoning
  • 1/4 tsp red pepper flakes
  • 3/4 lb medium shrimp, peeled and deveined
  • 1 tsp grated lemon zest

Preparation

Step 1

1. Cook the rice according to the package directions; keep warm.

2. Meanwhile, spray a large nonstick skillet with olive oil nonstick spray and stet over medium-high heat. Add the onion and peppers and cook, stirring often, until softened, 5 minutes. Add the garlic and cook, stirring, until fragrant, about 30 seconds.

3. Add the tomatoes, seasoning, pepper flakes and bring to a boil. Reduce the heat and simmer, stirring occasionally, until thickened, about 5 minutes. Stir in the shrimp and simmer until just opaque in the center, about 5 minutes longer. Stir in the lemon zest. Serve with the rice.
