Ingredients
- 1 12oz bag whole wheat wide noodles
- 1 lb lean ground beef
- 1 15oz container refrigerated marinara sauce
- 1 16oz container cottage cheese
- 1 10oz package frozen chopped spinach, thawed and squeezed dry
- 2 cups shredded cheese
- 1 large egg
- 3 scallions, chopped
- 1/4 tsp salt
- 1/4 tsp black pepper

Preparation
Step 1
heat oven to 350. coat a deep 2-qt casserole with nonstick cooking spray
bring a large pot of salted water to boiling. add noodles and cook 5 minutes. drain.
crumble beef into empty pasta pot. cook over medium-high heat for 5 minutes, until no longer pink. drain off excess fat. remove from heat and stir in marinara sauce
in large bowl- combine noodles, cottage cheese, spinach, 3/4 cup cheddar cheese, egg, scallion, salt and pepper
transfer noodle mixture to prepared dish. top with beef and sprinkle with remaining cheese. bake at 350 for 30 minutes. cook slightly before serving.
