Ingredients

  • 1 cup flour
  • 1/2 cup cocoa powder
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 6 tbsp butter, room temp
  • 1/2 cup sugar
  • 1 egg
  • 1/2 tsp vanilla
  • 12 oz chocolate, chopped
  • 1/4 tsp peppermint

Preparation

Step 1

Whisk together flour, cocoa, baking powder and 1/4 tsp salt.
In a mixer, beat butter and sugar until fluffy. Add egg and vanilla, mix well. Add flour mix, blend until just combined. Cover with plastic, wrap and chill 1 hour.
Preheat oven to 350. Line 2 baking sheets with parchment. Form balls of dough (1 tsp) and place on sheets. Flatten balls with bottom of a floured glass. Bake 8-10 minutes. Let cool completely.
Combine chocolate, peppermint, and pinch salt in large bowl, melt chocolate.
Place each cookie on a fork, dip in chocolate to coat completely. Let chocolate drip off, place on parchment to dry. Repeat with all cookies. Refrigerate until hard, 1 hour.
