Chocolate Pancake Sandwich

  • 1 cup heart-healthy store-bought pancake mix
  • 2 eggs
  • 2/3 cup milk
  • 1 teaspoon vanilla extract
  • mini chocolate chips (substitute with butterscotch chips or cream cheese)

Preparation

Step 1

Preheat a nonstick sandwich grill to medium heat.
In a large mixing bowl, make the pancake mix according to package instructions. Add the vanilla and stir to combine.
Pour some pancake batter into each of the 4 triangle-shaped spaces inside the preheated sandwich grill. Sprinkle a few chocolate chips in the middle. Push some of the batter over the chips to cover. Close the griddle and cook until golden brown.
Serve and eat on the go!
Tip: replace the chocolate chips with butterscotch chips or cream cheese.
