Ingredients
- 1 C unfiltered apple cider
- 2 TBL minced peeled ginger
- 2 TBL minced garlic
- 3 TBL soy sauce
- 3 TBL rice vinegar
- 1 TBL mild honey
- 8 rib lamb chops (3/4" thick), cut from 1 rack
- 1 scallion, finely chopped
Preparation
Step 1
boil 1st 6 ingredients until reduced to abt. 1/4 C (10-12 min)
cool completely
reserve 2 TBL glaze for drizzling
preheat broiler
pat lamb chops dry & sprinkle w/ 1/2 tsp salt (total)
arrange on rack of broiler pan & brush 3-4 min more for med-rare
transfer chops to plate & drizzle w/ reserved glaze
let stand 5 min
sprinkle w/ scallion
