Ingredients
- 3 lg garlic cloves
- 1 tsp dried oregano
- scant 1/2 tsp dried hot red-pepper flakes
- 2 TBL olive oil
- 4 chicken breast halves w/ skin & bone (2 to 2-1/4 LB total)
Preparation
Step 1
preheat oven to 500
w/ rack in upper third
mince & mash garlic to paste w/ 1/2 tsp salt
transfer to bowl
stir in seasonings
cut 2" long pocket (abt 1-1/2" deep) horizontally in side of each breast half
spread 1/2 tsp garlic mix. into each pocket
coat chicken w/ remaining garlic mixture
roast chicken, skin sides up in foil lined lg. shallow baking pan until just cooked through
20-25 min
