Creamy Shrimp Pasta

Ingredients
- 12 ounces linguini or fettuccine
- 4 tbsp unsalted butter
- 8 scallions, thinly sliced
- 4 cloves garlic, minced
- 3/4 cup dry white wine
- 2/3 cup mascarpone cheese
- 1 pound cooked shrimp
- 5 ounces baby spinach
- 1 tsp kosher salt
- table grind pepper to taste

Preparation
Step 1
1. Cook pasta in a Large pot of salted water until al dente, drain, set aside
2.Using the same pot, melt 4 tbsp unsalted butter. Add the scallions and the garlic and cook over moderately high heat until softened, about 2 minutes. Add the wine, salt and the spinach and simmer for 3 minutes.
3.Stir in the mascarpone, when melted add the shrimp and pasta, tossing until the pasta is coated about 3 minutes.Season with pepper.
4. Serve hot
