Ingredients
- Layer sliced zucchini, tomatoes, chopped onion and pepper in a good sized baking dish
- Sprinkle with oregano if desired
- Top with shredded cheese (mozzarella is best)
- If tomatoes aren’t real juicy, you can add some tomato sauce or ketchup at any point

Step 1
Bake 350 about one hour.
As this bakes, it will make it’s own liquid so you don’t need too much to begin with. It’s even good re-heated.
For a heartier meal, add pepperoni or browned ground beef, turkey, etc. as one of the layers
