Chicken Pasta Salad

Ingredients

  • 16 oz package pasta noodles
  • corn oil
  • 1 1/2 Tbs lemon juice
  • 1/4 cup soy sauce
  • 2 tsp ginger
  • 1 to 2 cups broccoli florets
  • 1 cup sliced carrots
  • 1 cup chicken meat
  • 1/4 cup sesame oil
  • 1/2 cup sliced scallions

Preparation

Step 1

Cook pasta as directed on package. Drain, rinse with cold water and set aside. Combine oil, lemon juice, soy sauce and ginger. Blend well. Combine vegetables, pasta, oil and mixture with scallions. Toss to coat. Chill. Serve on lettuce leaves.
