roasted butternut squash cubes with thyme and garlic

Ingredients
- 1 butternut squash, peeled and cut into cubes (~1 to 1.5 inch square)
- 1 T olive oil
- 1-2 Tablespoon fresh thyme leaves (or use .5 to 1 Tablespoon dried thyme)
- 1 T olive oil
- 2 teaspoons garlic powder (or 1-2 cloves of garlic, chopped)
- salt & pepper

Preparation
Step 1
Preheat oven 400 degrees. Line a baking pan with unbleached parchment paper or spray with non-stick spray. In small bowl, combine thyme, olive oil, garlic and salt and pepper and mix well. Toss with the squash and bake for 20-25 minutes. You want the squash flesh to be easily pierced with a fork but not mushy.
