Ingredients
- 2 tablespoons unsalted butter (bacon fat will work too, just reduce the salt slightly)
- 2 tablespoons extra virgin olive oil
- 2 cups carrots, peeled and diced
- 2 cups beets, peeled and diced
- 1 cup yellow onion, peeled and diced
- 1 celery stalk, chopped
- 5 garlic cloves, minced
- 3 pieces of bacon, chopped
- 2 1/2 teaspoons sea salt
- 1/4 teaspoon fresh cracked pepper
- 3/4 cup dry red wine
- 1 cup chicken stock
- 2 bay leaves
- 1 tablespoon fresh basil, chopped
- 1 1/2 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 1 tablespoon apple cider vinegar
- 1 pound ground beef, veal, or pork
