Polenta with Corn and Thyme

Ingredients

  • 2 Tbsp. Butter
  • 1 Cup frozen Corn
  • 1 tsp. fresh Thyme
  • 1 Cup Whole Milk
  • 1 1/2 Cups Water
  • 1/2 Cup Fine Yellow Cornmeal
  • 1/4 Cup Grated Parmesan Cheese
  • Salt and Pepper to taste

Preparation

Step 1

In a large saucepan melt 1 tbsp. butter over medium heat. Add 1 cup frozen corn kernals and 1 tsp. fresh thyme leaves. Cook, stirring occasionally, until corn is warmed thru, about 1 minute. Add 1 cup whole milk and 1 1/2 cups water and bring to a boil. Slowly whisk in 1/2 cup fine yellow cornmeal. Cook, stirring constantly, until mixture is thick and creamy, about 6 minutes. Remove from heat and stir in 1 tbsp. butter and 1/4 cup grated parmesan cheese. Season with salt and pepper; serve immediately.
