PUMPKIN ROLL

Mamaw, Mabel Ginter, used to make this every Christmas for our family. It is really delicious!

Ingredients
- ROLL ~
- 2 large eggs
- 1 cup sugar
- 1 tsp. baking soda
- 3/4 cup flour
- 2/3 cup pumpkin (can - solid pack)
- 1/2 tsp. cinnamon
- FILLING ~
- 1 - 8 oz. cream cheese
- 1 tsp. vanilla
- 1 cup 10X sugar (powdered/Confectioner's sugar)
- 2 TBS. butter
Preparation
Step 1
PREHEAT OVEN TO 350F
Grease and flour 18X12 cookie sheet
Beat together:
2 large eggs
1 cup sugar
1 tsp. baking soda
3/4 cup flour
2/3 pumpkin (can - solid pack)
1/2 tsp. cinnamon
Pour mixture on cookie sheet and bake for 15 minutes. Turn out on to a dishtowel that has been sprinkled with 10X sugar and cool for 15 minutes. Roll up in towel for 15 minutes. Unroll and spread with filling (recipe follows. Nuts may be added. Roll. Chill and slice.
FILLING ~
Beat until creamy:
1 - 8oz. cream cheese
1 tsp. vanilla
1 cup 10X sugar
2 TBS. butter
