Lemon and Lime Coolers

This no bake cookie recipe is ideal for Easter and early spring! It is a snap to make and produces a lovely pastel-colored, citrus-flavored cookie.

Ingredients

  • 1/2 pound Merckens yellow coatings
  • 1/2 pound Merckens light green coatings
  • 12 to 16 drops LorAnn lime oil
  • 12 to 16 drops LorAnn lemon oil
  • 2 teaspoons paramount crystals
  • Pinch citric acid
  • 1 box (12 ounces) vanilla wafers, such as Nilla Wafers by Nabisco

Preparation

Step 1

Melt yellow coatings in a small bowl. Stir 12 drops of lemon oil, 1 teaspoon paramount crystals and 1/2 pinch of citric acid into melted coating. Taste coating. Add more lemon oil if desired.

Drop vanilla wafers, one at a time, into melted coating.

Using a dipping tool or fork, remove wafer from the coating. Tap the wafer on the side of the bowl to remove excess coating.

Place coated wafers on a piece of parchment paper.

Repeat process with light green coatings and lime oil.
