Carrot Cake (Ben Davis)

Ingredients

  • 1 & 1/2 cup vegetable oil
  • 2 teaspoons baking soda
  • 2 cups sugar
  • 1 teaspoon salt
  • 4 eggs
  • 2 teaspoons cinnamon
  • 2 cups all purpose flour
  • 3 cups raw finely grated carrots
  • Frosting: 1/4 cup butter
  • 4 oz. soft cream cheese
  • 2 & 1/2 cups confection sugar
  • 1 teaspoon vanilla

Preparation

Step 1

Mix together, then fold in carrots! Hand mix all ingredients! Grease and flour 9x13 pan. Bake at 350 for 35-40 minutes! When cool top with frosting!
