Pasta Salad with TURKEY AND ASPARAGUS

Ingredients
- Dressing
- 2 cloves garlic, crushed
- 2 small shallots, minced
- 2 large eggs
- 1 C extra virgin olive oil
- 3 T balsamic vinegar
- 1/2 tsp Herbs de Province
- Salad
- 1 lb fresh asparagus, steamed, extra crisp
- 1 red bell pepper cut into 1 inch strips & steamed extra crisp
- 1 1/2 C smoked turkey cut into pieces
- (have the deli counter cut smoked turkey into 1" cuts - tell them you are going to cube it for a salad - I get 2 cuts which is usually about 3/4 of a pound)
- 1 lb bow tie or rotelle pasta or any other shape you like
- 1/2 C grated Parmesan cheese

Step 1
To prepare dressing
Drop garlic into food processor with machine running
Process in shallots, eggs and 2 Tbs oil
Blend well
Add vinegar, herbs and seasonings
With motor running slowly add remaining oil
Transfer to bowl and let stand for several hours - have never let it "stand" that long, but you can if you want to.
Cut asparagus diagonally into 1" pieces. In a large bowl, toss with pepper, turkey, pasta cooked al dente and drained, cheese and dressing. Yum.
