Salmon with Spinach and Feta

Ingredients

  • 1.5-2 lbs salmon (2 large pieces is ideal)
  • 6-8 oz fresh spinach
  • 3-5 oz feta cheese
  • 1 Tbls lemon juice
  • garlic powder and pepper, as desired
  • Asperagus and fruit

Preparation

Step 1

Remove skin from salmon
Mix spinach, feta, and lemon juice (either in food processor or by hand)
Put 1/2 of mix in each salmon and fold over
Close salmon with using toothpicks
Bake at 350 for 30 min

Serve with asperagus and fruit
