Ingredients
- 3 C water
- 2 C uncooked basmati rice
- 2/3 tsp salt
- 1 TBL olive oil
- 1 TBL butter
- 1 tsp brown mustard seeds
- 3 TBL chopped fresh cilantro
- 2 tsp grated lemon rind
- 2 tsp fresh lemon juice
Preparation
Step 1
combine 1st 3 ingredients in lg. saucepan over med-high heat
bring to boil
cover
reduce heat & simmer 15 min or until liquid is absorbed & rice is tender
remove pan from heat
let stand 5 min
flurr w/ fork
heat oil & butter in sm. skillet over med-high heat until butter melts
add mustard seeds to pan
cook 2 min or until seed begin to pop
scrape seed mixture into rice mixture using rubber spatula
add 3 TBL cilantro, lemon rind, lemon juice to rice
stir well
