French Onion Soup

Ingredients

  • 1-1/2 LB (abt 5C) thinly sliced yellow onions
  • 3 TBL butter
  • 1 TBL oil
  • 1 tsp salt
  • 1/4 tsp sugar
  • 3 TBL flour
  • 2 -QTS brown stock (3 cans consome + 3 cans water)
  • 1/2 C dry white wine or dry white vermouth
  • 3 TBL cognec
  • french bread
  • parmesan cheese

Preparation

Step 1

cook onions slowly w/ butter & oil in heavy covered saucepan for 15 min
uncover
raise heat to moderate & stir in salt & sugar
cook 30-40 min
stir freq. until onions have turned an even deep golden brown

stir in flour
stir for 3 min

add boiling brown stock

bring to boil
add wine or vermouth
simmer partially covered 30-40 min
stirring occassionally
correct seasoning
add cognac

serve over french bread & topped w/ cheese
