Mini Maple-Chocolate Chip Pancake Muffins

Ingredients

  • 2/3 cup buttermilk
  • 1 egg
  • 2 tbsp maple syrup
  • 2 tbsp butter, melted
  • 1 cup flour
  • 2 tbsp sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup mini semisweet chocolate chips
  • 1/2 cup maple syrup

Preparation

Step 1

Heat oven to 350. Spray 24 mini muffin cups with cooking spray. In medium bowl, beat buttermilk, egg, 2 tbsp maple syrup, and butter with a whisk. Stir in flour, sugar, baking powder, baking soda and salt. Reserve a few chocolate chips, and fold the rest into the batter. Divide evenly among cups, sprinkle with reserved chips.
Bake 12-14 minutes or until light brown and set. Cool 3-4 minutes, remove from pan. Serve with rest of maple syrup.
