Fish Tacos

Ingredients

  • tsp each:
  • 3/4 C sour cream
  • 1 can (4oz) chopped green chilies
  • 1 TBL fresh cilantro leaves
  • 1 TBL lime juice
  • 4 tilapia fillets (4-oz each)
  • 1/2 C flour
  • 1 egg white, beaten
  • 1/2 C panko bread crumbs
  • 1 TBL canola oil
  • 1/2 tsp salt
  • 1/2 tsp salt
  • white pepper
  • cayenne pepper
  • paprika
  • 8 corn tortillas (6") warmed
  • 1 lg. Tomato, finely chopped

Preparation

Step 1

place sour cream, chilies & lime jiice in food processor until blended
set aside

cut each tilapia fillet lengthwise into 2 portions
place flour, egg white & bread crumbs in separate shallow bowls
dip tilapia in flour, then egg white then crumbs

in lg. skillet over med. heat, cook tilapia in oil in batches 4-5 min on each side or until fish flakes easily w/ fork
combine seasonings
sprinkle over fish

place portion of fish on each tortilla
top w/ abt. 2 TBL sour cream mixture
sprinkle w/ tomato
