Ingredients
- 1 LB grd. beef
- 1/4 C chopped onion
- 1 can (16oz) refried beans
- 1 can (14-1/2oz) mexican stewed tomatoes, drained
- 1 C salsa
- 1 can (4oz) chopped green chilies
- 1 envelope taco seasoning
- 1 tsp dried oregano
- 1 tsp grd. cumin
- 1/4 tsp garlic powder
- 1-1/4 C shredded jack cheese
- 1-1/4 C shredded mozzarella
- 3/4 C small curd cottage cheese
- 1-1/4 C sour cream, divided
Preparation
Step 1
in dutch oven, cook beef & onion over med heat until meat is no longer pink,
drain
stir in beans, tomatoes, salsa, chilies & seasonings
in bowl, combine jack & mozzarella cheeses
set aside 1-1/2 C
stir cottage cheese & 3/4 C sour cream into remaining cheese mixture
spread 1 C meat sauce into greased 13X9X2" baking dish
layer w/ 3 noodles & 1/3 of cottage cheese mixture & meat sauce
repeat layers twice (dish will be full)
cover & bake # 350 for 1 hr
uncover, spread w/ remaining sour cream
sprinkle w/ reserved cheeses
bake 10-12 min longer or until cheese is melted
let stand for 20 min before serving
