Enchilada Beef

Ingredients

  • 1/2 C chopped onion
  • 1 LB lean ground beef
  • 1 C tomato juice
  • 1 can tomato paste
  • 1 can (4oz) chopped green chilies, drained
  • 2 TBL + 2 tsp enchilada sauce mix
  • 2 C (8oz) shredded monterey jack cheese, divided
  • 1/2 C coarsely crushed corn chips
  • additional corn chips

Preparation

Step 1

place onion in microwave-safe bowl
cover & microwave on high 2-3 min or until tender
crumble beef over onion & mix well
cover & cook on high 4-6 min, or until beef is no longer pink
stirring once
drain

stir in tomato juice, tomato paste, green chilies & sauce mix
spread half of beef mixture in 2-QT microwave-save dish
sprinkle w/ 1C cheese
top 2/ remaining beef mixture
cover & microwave for 2-3 min or until heated through

sprinkle w/ crushed corn chips & remaining cheese
microwave 1 min longer or until cheese is melted

serve w/ additional corn chips
