Berry Jam (Ball® FreshTECH Automatic Home Canning System)

Why buy when you can easily make your favorite fresh berry jam? Recipe is easily made using a Ball® FreshTECH Automatic Home Canning System but traditional methods work as well.

Ingredients

  • 4 cups crushed berries (about 2 pounds or six 6-ounce containers) NOTE: I like to use raspberries, blueberries, strawberries and blackberries
  • 4-1/2 tablespoons Ball® brand RealFruit Classic Pectin
  • 1/2 teaspoon butter (optional)
  • 5 cups granulated sugar
  • 6 half Pint (8-ounce) glass preserving jars with lids and bands

Preparation

Step 1

Add the pectin and fruit (and butter, if using) into the Auto Jam Maker.
Press Jam and Enter (should default to 21 minutes.)
Wait for the beep, and gradually add in the sugar (at about 16 minutes).

If using the Ball® FreshTECH Automatic Home Canning System, plug in the system and fill the inner pot to the fill line.

Sterilize the jars by placing on top of the rack, and press Pre-heat then start (about 12 minutes).

Carefully remove the hot jars, and fill each jar (this recipe yields about 6 half pint jars.) A funnel makes this less mess to do. I wear an "Ove Glove" to hold each hot jar.

Cover with a lid and band and close, but don't close too tightly!

Place into the Ball® FreshTECH Automatic Home Canning System, place the lid on and lock.

Press Jam/Jelly and #1. (about 23 minutes).

Carefully remove each jar onto a towel covered baking sheet. Allow to cool for several hours, or overnight.

You can also use a more traditional canner, but this (expensive) "gadget" has made canning a dream. I love it, and use it every year with delight!
