Thai peanut chicken salad 2 Pictures


  • 1/2 cup mayo
  • 1/4 cup chopped fresh cilantro
  • 2 tblsp peanut butter sauce
  • 1 tblsp soy sauce
  • 1 tblsp fresh lime juice
  • 2 tsp fresh grated ginger
  • 1 red bell pepper, seeded and thinly sliced
  • 1-2 jalapeño chiles, seeded and minced
  • 5 cups cooked chicken breasts
  • Salt and pepper to taste



Step 1

Combine mayo, cilantro, peanut butter, soy, lime juice, ginger, bell pepper, and jalapeño in lg bowl. Add chicken, toss until coated. Transfer to airtight container, store for up to 2 days. Season with salt and pepper, serve
