Ingredients
- 1/2 cup mayo
- 1/4 cup chopped fresh cilantro
- 2 tblsp peanut butter sauce
- 1 tblsp soy sauce
- 1 tblsp fresh lime juice
- 2 tsp fresh grated ginger
- 1 red bell pepper, seeded and thinly sliced
- 1-2 jalapeño chiles, seeded and minced
- 5 cups cooked chicken breasts
- Salt and pepper to taste

Step 1
Combine mayo, cilantro, peanut butter, soy, lime juice, ginger, bell pepper, and jalapeño in lg bowl. Add chicken, toss until coated. Transfer to airtight container, store for up to 2 days. Season with salt and pepper, serve
