Lemon Baked Fish with seasoned panko topping

Ingredients

  • 1 lemon
  • 4 (6 oz) fish fillets - swai, talapia, pollock or cod - rinsed and patted dry
  • 1 Tbsp butter
  • 2 Tbsp olive oil, separated
  • 1/2 c panko crumbs
  • 2 Tbsp chopped fresh dill or cilantro and basil

Step 1

1. Preheat oven to 425 degrees. Finely shred peel from lemon; set aside. Halve lemon and slice 1/2 into thin slices. Coat a baking pan with nonstick cooking spray. Arrange lemon slices in pan. Put fish on top of lemon slices and brush with 1 Tbsp of the olive oil. Season with salt and pepper. Bake about 18 minutes or until fish flakes easily.

2. Meanwhile, melt butter in skillet over medium heat. Add panko, cook 2-3 minutes until golden brown, stirring constantly. Remove from heat and add 1 Tbsp olive oil, seasoning and lemon pill; toss to mix. Transfer fish to serving platter (discard lemon slices). Squeeze juice from half lemon over fish, top with bread crumb mixture.
