Ingredients
- 1 medium onion diced
- 2 tablespoons ginger small dice
- 6 jalapeños diced
- 1 tablespoon cumin toasted and ground
- 1/2 cup rum
- 1 pineapple diced
- 1/2 cup fresh lime juice
- 1/2 cup raw sugar
- 1/4 cup chopped cilantro
- Salt to taste
- Freshly-ground black pepper to taste

Step 1
In saucepan over medium heat, saute onions, ginger, jalapeños, and cumin for 6 minutes. Add rum, cook until almost all is evaporated. Add pineapple, lime juice, and sugar, bring to simmer and remove from heat. Add cilantro, salt and pepper, to taste.
This recipe yields about 4 cups.
