Baked Chicken Fingers

These chicken fingers make a perfect summer meal served with some fresh fruit and corn on the cob. Any way you serve them, they’re delicious! These baked chicken fingers are super easy to make, incredibly delicious, and good for you too! My family loves chicken pretty much any way I make it, but these chicken fingers are a special favorite. They’re crisp on the outside and juicy and tender on the inside, and always come out delicious!

Ingredients

  • 1 1/2 pounds chicken breast, trimmed and cut into strips (approximately 3 large breasts)
  • 1 cup flour
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 eggs
  • 3/4 cup bread crumbs (I used Italian but regular work great too)
  • 1 cup panko bread crumbs
  • cooking spray

Preparation

Preheat the oven to 400. Line a baking sheet with parchment paper or spray with cooking spray.
In a shallow dish or pie pan, whisk together the flour, salt and pepper. In another shallow dish, beat the eggs lightly. In a third dish, whisk together the regular and panko bread crumbs.
Dip each piece of chicken in the flour, then in the egg, then in the bread crumbs, and place on the prepared baking sheet. (I find that it helps to use one hand for dipping in the dry ingredients and one hand for dipping in the eggs, to prevent making a big mess.)
Spray each of the chicken strips lightly with cooking spray. Bake 20-25 minutes, or until golden brown and cooked through. Enjoy!
