Ingredients

  • 30 oz canned pumpkin
  • 3/4 cup butter
  • 1/4 cup buttermilk
  • 1 cups brown sugar
  • 3 eggs
  • 1 cup white flour
  • 2 cups whole wheat flour
  • 4 tsp cinnamon
  • 1 tsp nutmeg
  • 4 tsp baking soda
  • 1/2 tsp salt
  • 2 scoops protein powder
  • 3 1/2 cups rolled oats
  • 1/4 cup wheat germ
  • 1/4 cup flax seed
  • 1 cup chocolate chips

Preparation

Step 1

In a mixing bowl, combine flours, cinnamon, baking soda, and salt. Set aside.

Blend pumpkin and butter.
Add buttermilk. Mix until well-blended.
Add brown sugar and eggs and mix until combined.
Add dry ingredients and mix. Add oats, wheat germ, flax, and chocolate chips. Mix until combined.
Fill muffin tins and bake for 15-20 minutes at 350 degrees. Makes 24 muffins.
