Chicken Saute w/ Lemon Caper Sauce

Ingredients

  • 4 (1/4 lb) skinless boneless chicken breast halves, pounded to 1/8" thickness
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 Tbsp and 1 tsp unsalted butter
  • 1/2 cup reduced sodium chicken broth
  • 1/4 cup fresh lemon juice
  • 1 Tbsp drained capers
  • 1/2 tsp dried oregano

Preparation

Step 1

1. Sprinkle the chicken with 1/4 tsp salt and 1/8 tsp pepper.

2. Melt the 1 Tbsp butter in a large nonstick skillet over med-high heat. Add the chicken and cook until lightly browned, about 2 min on each side. Add the broth, lemon juice, capers and oregano; bring to a simmer. Reduce the heat and simmer, turning the chicken once to coat with sauce, until the chicken is cooked through, about 2 min.

3. Remove the skillet from the heat and swirl in the remaining 1 tsp butter, 1/4 tsp salt and 1/8 tsp pepper.
