Tex Mex Layered Salad

Ingredients

  • 2 hearts of romaine lettuce, shredded (about 8 1/2 cups)
  • 2 (6 oz)pkgs refrigerated grilled chicken breast strips
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 (8.75 oz) can whole kernel corn, rinsed and drained
  • 1 (2 oz) jar diced pimiento, drained
  • 1 cup (4 oz) shredded 50% reduced fat cheddar with jalapenos
  • 1 ( 2.25 oz) can sliced ripe olives, drained
  • 1 (10 oz) can diced tomatoes and green chiles, drained
  • 1 (8 oz) carton fat free sour cream
  • 1/3 cup tub style cream cheese
  • 1/3 cup chopped green onions (about 2)
  • 1 tsp ground cumin
  • 1 garlic clove

Preparation

Step 1

1. Layer first 7 ingredients in a large bowl. Cover and chill until ready to serve.

2. Place tomatoes and next 5 ingredients in a blender or food processor; process until smooth. Toss dressing with salad just before serving.
