Strawberry Lemon Shortbread Bars

ust when I think I couldn’t possibly find another strawberry dessert recipe to share, one pops up. I’m calling this one Strawberry Lemon Shortbread Bars. It’s actually supposed to be a cake but the minute I put it in my mouth, I thought immediately that it was one of the best shortbreads I had ever tasted. (Must be the 2 sticks of butter. Ha!)

Ingredients

  • 1 cup butter softened
  • 3/4 cup sugar
  • 1 egg
  • Zest of 2 lemons
  • 1/4 cup lemon juice (about 2 small lemons)
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup fresh strawberries (diced)
  • Powdered sugar for dusting

Preparation

Step 1


Preheat oven to 350 degrees.
In a large mixing bowl, cream butter and sugar until fluffy.
Add egg, 2-3 Tablespoons lemon zest, and lemon juice
Mix well.
In a separate bowl, whisk together flour, baking powder and salt.
Slowly add dry mixture to batter just until combined.
Fold in strawberries.
Put dough into prepared 9 x 9 pan and spread to the edges with a large spoon.
Bake 35 - 40 min. until golden on top and knife inserted in center comes out clean.
Dust with powdered sugar if desired
