Ingredients
- 3/4 cup Carla's Gluten Free All-Purpose Flour Blend Recipe
- 1/2 cup gluten-free cornmeal (Bob’s Red Mill)
- 2 teaspoons gluten free baking powder (Rumford)
- 1/8 teaspoon paprika
- 1/4 teaspoon salt
- 1 large egg, at room temperature
- 2 Tablespoons granulated sugar
- 1 large yellow finely onion, chopped (or 1 1/8 cups sauteed)
- 1/4 cup buttermilk*
- 1 Tablespoon Earth Balance dairy free spread (or butter), melted and slightly cooled
- 1 Tablespoon neutral-flavored oil (or more butter)
- Neutral-flavored oil, for frying
- 5 Tablespoons mayonnaise
- 1 1/2 teaspoons honey
- 1 teaspoon gluten free chipotle salsa sauce (Bufalo) (or 1 teaspoon honey + 1/2 teaspoon hot sauce)
Preparation
Step 1
Add oil to a large skillet, and add the onion. Saute, stirring occasionally over low heat until translucent.Set aside for later use.You should end up with a little over 1 cup of sauteed onion.
In a medium-size bowl, combine flour blend, cornmeal, baking powder, paprika, salt, and sauteed onion.
In a separate bowl, whisk together egg and sugar until sugar dissolve.
Add buttermilk and whisk again.
Slowly pour in melted butter while constantly whisking.
Create a well in the center of the flour mixture and pour milk mixture in the center. Stir using a wooden spoon. The batter/dough will be thick. Set it aside for the dry ingredients to soften, about 10 minutes.
While the dough is resting, make the dipping sauce: Whisk all three sauce ingredients together; and set aside.
Preheat your deep-fryer or 2 to 3 inches of oil in a heavy skillet to about 375°F.
Scoop dough using a 1 1/2 tablespoon spring-action scooper or heaping tablespoon, place on a slotted spoon or skimmer, dip it into the oil and shake it loose. Do not allow the hush puppy to stay on the bottom of the pan/fryer. Use the slotted spoon to spin it around to prevent sticking. After about 20 to 30 seconds it float to the top. It won't stick after about 15 seconds. Cook for 4 to 5 minutes (longer if you desire it crispier), or until deep golden brown. Turn them over to brown both sides or continuously rotate.
Remove the gluten free hush puppies from the oil using the slotted spoon; and allow the access oil to drip off. Transfer to a paper towel-lined plate to drain.
Tips
*Dairy Free Buttermilk Recipe (can also be made with cow's milk of any fat content): Combine 1 1/2 teaspoons apple cider vinegar with enough milk to make 1/2 cup. Set it aside for about 15 minutes until it thickens.
