Chefs Salad w/ Creamy Dijon Dressing

Ingredients

  • 3 cups chopped cooked chicken breasts
  • 1 (10 oz) pkg torn hearts of romaine lettuce
  • 2 cups grape tomatoes
  • 1 cup diced ham
  • 1/2 cup (2 oz) reduced fat shredded sharp cheddar
  • 1/2 cup sliced ripe olives
  • 2 hard cooked eggs, chopped
  • 2 Tbsp light mayo
  • 2 Tbsp Dijon mustard
  • 1 1/2 tsp cider vinegar
  • 1 tsp sugar
  • 1 tsp minced garlic
  • 1/8 tsp salt
  • 1/8 tsp pepper

Preparation

Step 1

1. Combine first 7 ingredients in a large bowl.

2. Stir together mayo and next 6 ingredients until blended. Add dressing to chicken mixture; toss gently to coat. Serve immediately.
