Ingredients

  • 4 tsp EVOO
  • 4 medium baking potatoes (1 1/2 pounds total), scrubbed
  • 1/2 tsp salt
  • 1/8 to 1/4 tsp freshly ground pepper
  • 1/4 cup grated parmesan

Preparation

Step 1

Line a baking sheet with aluminum foil, brush with 2 tsp EVOO

Cut the potatoes lengthwise into 1/2 thick wedges and transfer to a large bowl

Add remaining EVOO toss to coat

Sprinkle potato wedges with salt and pepper, tossing to coat

Arrange potatoes in a single layer on a prepared baking sheet

Bake in a 450 degree for 12 minutes

Turn potatoes, sprinkle with parmesan

Bake for 10 to 12 minutes more or until golden brown
