Carol's Chicken Enchildas

Ingredients

  • 2 can of cream of chicken soup
  • 3 or 4 pre-cooked chicken breasts - diced
  • 1 cup sour cream
  • 1 can sliced olives
  • 1 small can of diced chilies
  • 2 cups shredded cheddar or jack cheese
  • 6 to 10 flour tortillas

Preparation

Step 1

Combine 1st 5 ingredients in a sauce pan and heat, but do not boil.

Spray a 9x13 inch pan with vegetable spray.

Spoon 2-3 tbsp of chicken mixture into tortillas top with 1 - 2 tbsp of cheese.

Roll tortilla and place seam side down in pan. When pan is filled, top with remaining chicken mixture and sprinkle remaining cheese over top.

Bake uncovered for 30 minutes at 350 degrees.
