Stir-Fried Chicken and Broccoli

Ingredients

  • Vegetable cooking spray
  • 1 lb skinless, boneless chicken breasts, or thighs, cut into strips
  • 1 cup broccoli florets
  • 2 medium carrots, cut into matchstick-thin strips (about 1 cup)
  • 1 medium onion, cut into wedges (about 1/2 cup)
  • 1 can Campbell's cream of broccoli soup
  • 2/3 cup water
  • 2 tsp soy sauce
  • 1/4 tsp ground ginger
  • 4 cups hot cooked rice

Preparation

Step 1

1. Spray 10 inch nonstick skillet with cooking spray. Heat over medium-high heat 1 minute. Add half of the chicken; stir fry until browned. Remove; set aside. Repeat withe remaining chicken

2. Remove skillet from heat; spray skillet with cooking spray. Reduce heat to medium. Stir fry broccoli, carrots and onions until tender crisp

3. Stir in soup, water, soy sauce and ginger. Heat to boiling. Return chicken to skillet. Heat through, stirring occasionally.
