Grasshopper Ice Cream Sandwiches

Ingredients

• 1 chocolate cake mix
• 1/2 cup butter
• 2 eggs
• 1 cup green mint chips
• 1/2 gallon mint chocolate chip ice cream

Preparation

Step 1

Mix together cake mix, butter, and eggs. The dough will be stiff. mix in mint chips. Using a cookie scoop, drop by teaspoon fulls onto a baking sheet. Bake 8-12 minutes. Remove cookies from oven and allow to set up on hot baking sheet for 2 minutes. Remove from pan and place on cooling rack. Once cooled place a scoop of ice cream between two cookies. Wrap the sandwiches with plastic wrap. Store in an airtight container in the fridge.
