Caesar salad

Ingredients

  • 2 slices thick white bread, cut into cubes
  • 1/4 cup olive oil
  • salt and pepper
  • 1 garlic clove, minced
  • 1 large egg yolk
  • 1 1/2 tsp Dijon mustard
  • 1 tbsp lemon juice
  • Romaine lettuce
  • 2 tbsp grated parmesan

Preparation

Step 1

Preheat oven to 400. On a rimmed baking sheet, toss bread with 1 tbsp oil, and season with salt and pepper. Bake until golden, 10-12 minutes. Let cool completely.
On a cutting board, combine garlic and pinch of salt. Using a large knife, drag across mixture until a paste forms. Transfer to a large bowl, whisk in egg yolk, mustard and lemon juice. Gradually whisk in 2 tbsp olive oil. Season with pepper. Add croutons and lettuce just before serving, and top with parmesan.
