Barley pilaf

Ingredients

  • 1 cup pearl barley
  • 2 tbsp unsalted butter
  • 1 shallot, minced
  • salt and pepper
  • 1/4 pine nuts, toasted
  • 2 tbsp parsley, chopped
  • 1 tbsp lemon juice

Preparation

Step 1

In large pot of boiling salted water, cook pearl barley until tender, 35 minutes. Drain and rinse to stop cooking.
In large skillet, melt butter over medium. Add shallot and season with salt and pepper. Cook until soft, 2 minutes. Add barley and stir to combine. Transfer to a large bowl, stir in pine nuts, parsley and lemon juice. Season with salt and pepper.
