Ingredients
- 1 16 ounce loaf French bread
- 1 quart half-and-half
- 2 tablespoons unsalted butter
- 3 eggs
- 1 1/2 cups sugar
- 2 tablespoons almond extract
- 1 teaspoon vanilla
- 3/4 cup sliced almonds
- 3/4 cup golden raisins, optional
- Amaretto Sauce
- 8 tablespoons unsalted butter
- 1 cup powdered sugar
- 1 well beaten egg
- 4 tablespoons amaretto
Preparation
Step 1
Break up bread into small pieces. Place in medium bowl and cover with half-and-half.
Preheat oven to 325 degrees. Grease a 9x13 inch baking dish wiht the butter. In a small bowl, beat together eggs, sugar, and extracts. Stir into bread mixture. Gently fold almonds and raisins, if using, into bread mixture.
Spread bread mixture evenly in baking dish. Set on middle rack in oven and bake for 50 minutes or until golden brown. Cool.
For sauce: Stir together butter and sugar over simmering water in the top of a double boiler until sugar is dissolved and mixture is very hot. Remove from heat.
Whisk the egg into the butter-and-sugar mixture, and continue whisking until the sauce has come to room temperature. Add the amaretto. To serve, cut the bread pudding into squares and spoon the sauce evenly over each serving.
