Ingredients

  • 1/2

    c. whole wheat flour

  • 1

    c. granulated sugar

  • 1/2

    tsp. baking powder

  • 1/4

    tsp. salt

  • 5

    tbsp. cold unsalted butter, cut into pieces

  • 3/4

    tsp. vanilla

  • 2

    eggs

  • 2/3

    c. chopped dried apricot halves

  • 1

    c. shelled natural pistachios

  • 1

    tsp. granulated sugar(separately)

Directions

Preheat oven to 350 degrees.Brush a baking sheet with butter & keep aside.Blend flour,sugar,baking powder,salt & unsalted butter,in a food processor.To this add vanilla,mix it up well,till it makes a coarse mix.Beat eggs & add to the mix.It's time to add apricot & pistachios & blend it till it is moistened. Pour out the mixture into a bowl & make a dough with hands & divide this dough into half.Spread these halves on the sheet in a long shape.Sprinkle sugar over this & bake till it turns brown(it should take you 25 mintues to bake).Remove it from the sheet & cool on the rack.Cut these out into shape of your choice .Place these back on the sheet,with the side side up & bake till lightly brown.Once baked transfer it to the rack & cool it.
