Ingredients

    Cup Mayonnaise

  • 5

    Slices Bread, toasted

  • 4

    Slices American Cheese

  • 12

    Bacon Strips, cooked and crumbled

  • 4

    Eggs

  • 1

    Medium Tomato, sliced, then halved

  • 2

    Tbs. Butter

  • 2

    Tbs. Self-Rising Flour

  • ¼

    tsp. Salt

  • tsp. Pepper

  • 1

    Cup Milk

  • ½

    Cup Cheddar Cheese, shredded

  • 2

    Green Onions, thinly sliced

  • Shredded Lettuce, for topping

Directions

Preheat oven to 325 degrees. Spread mayonnaise on one side of toast and cut into small pieces. Arrange toast pieces, mayo side up in a greased 8" square baking dish. Top with cheese slices and bacon. In a skillet, scramble eggs over medium heat until completely done; place over bacon. Top with tomato slices, then set aside. In a saucepan, melt your butter. Stir in flour, salt and pepper until smooth. Gradually add your milk and bring to a slow boil. Cook for 2 minutes, stirring constantly until the mixture thickens. Pour mixture on top of tomato layer, then sprinkle with cheese and onions. Bake uncovered for 10 minutes. Cut into squares and serve with shredded lettuce.
