German Potato Salad

Ingredients

  • 6 lbs red potatoes (unpeeled)
  • 1 lb diced bacon
  • 1 1/2 c chopped onion
  • 6 tsp salt
  • 1/2 tsp pepper
  • 1 c sugar
  • 1 c white vinegar
  • 2 eggs, beaten

Preparation

Step 1

Cook potatoes; cool slightly and dice. Fry bacon until crisp. Remove from pan. Add to bacon grease the chopped onion; cook until tender.

Add sugar, vinegar, salt, pepper. mix until well-blended. Beat 2 eggs well; whip into mixture. Return to burner until thickened. Gently stir in potatoes and bacon. Garnish with fresh minced parsley.
