Herbal Vinegar

You can use basil, tarragon (a classic), Dill or any other herb. Combining 2 sprigs of rosemary with two of tarragon is a wonderful combination. Just use freshly picked herbs. The earlier in the morning you pick them the more intense the flavor they will have

- 4 large sprigs of the herb or herbs used
- 2 c. white wine or champagne vinegar

Preparation
Step 1
Put the herbs into a pint bottle and pour in the vinegar.
Seal and store for at least 2 to three weeks before using.
If giving as a gift decant into a decorative container and add a fresh sprig of the herb used.
