CUBAN PIT ROASTED SUCKING PIG

Ingredients

  • Pit Roasted Cuban Style Pork with Mojo Sauce
  • • 1 whole suckling pig, about 15 lbs
  • • 1/2 cup kosher Salt and 1/8 cup Black Pepper for seasoning
  • Mojo Marinade for Pig
  • • 1/2 quart Orange Juice
  • • 4 limes, juiced, save the skins.
  • • 12 cloves of garlic peeled
  • • 3 fresh Jalapeño peppers seeded
  • • 1/2 bunch of fresh cilantro, coarsely chop leaves and stems
  • • 1 tablespoon ground cumin seed
  • • 1 tablespoon dried oregano

Preparation

Step 1

1. Poke the skin of the pig intermittently with a sharp paring knife. Rub down the pig with Salt and black pepper.

2. Place all the marinade ingredients except the lime skins in a blender or food processor,

3. Puree the ingredients together. Place the pig in a large clear plastic bag. Pour the marinade all over the pig and rub into the cavity and the skin. Place the lime skins in and around the pig. Refrigerate the marinated pig overnight.

4. Slow roast the pig over an open fire or in a Caja China for 6 hours or until done to your liking.

Mojo Sauce

• ½ qt of Orange Juice
• 4 Limes juiced
• 4 cloves of Garlic
• 1 ½ fresh jalapeños seeded
• 1 bunch of fresh cilantro leaves coarsely chopped
• 1 teaspoon ground cumin seed
• 1 teaspoon dried oregano

NOTE: Puree all ingredients together in a blender or food processor. Serve with the roast pork. Serve pork with Rice and Black beans. Garnish with wedges of fr
